Abstract
Indonesia people usually consume rice, sago, wheat, corn, or other grain ingredients to fulfill their nutritional needs,. Rice as a source of calories has starch in the range of 85-90%, which is dominated by carbohydrates found in the endosperm of the rice grain. Wastewater from washing rice can still be used because it still contains carbohydrate compounds, which are ready to be processed into useful products. This study aims to produce bioethanol from rice washing water through hydrolysis and fermentation processes. The starch hydrolysis process used HCl 1N pH 4-5, with variations in the glucoamylase enzyme 1% w/v, 2% w/v, and 3% w/v. Fermentation using Saccharomyces cerevisiae for a time variable of 3,4,5,6,7 days. Results The highest percentage of glucose levels was obtained in hydrolysis with 3% enzyme levels and the highest bioethanol levels were obtained at 7 days of fermentation, which was 13%.
