Abstract

The purpose of this study is twofold, namely first to understand the process of processing chicken intestines into chips with various flavors, and second to describe the economic aspects of the chicken intestine chips business in the Long Market, Southeast Sulawesi, Kendari City. This research is a Research and Development type, which involves ten stages of research as follows: 1) Preliminary study and data collection, 2) Planning of research steps, 3) Product development in draft form, 4) Initial field trials, 5) Revision based on trial results, 6) Field trials continue, 7) Product improvement based on field trial results, 8) Field implementation tests to test business feasibility, 9) Final product improvement, 10) Dissemination and implementation of research results. By following these stages, it is hoped that this research will provide a deeper understanding of the process of processing chicken intestines into chips and also assist in assessing the economic aspects of the chicken intestine chips business in the Long Market, Southeast Sulawesi, Kendari City. The results of the study concluded that the processing of chicken intestines into various flavored chips is liked and can be profitable. In accordance with the results of the business feasibility analysis carried out using the Internal Rate of Return (IRR) method, a value of 20.453% is obtained which is greater than the Discount Factor value, which is 20%. In addition, the value of the Benefit Cost Ratio is 2.26. It means that in this case the value of the Benefic Cost Ratio is greater than 1 (B/C > 1) and it means that the chicken intestine chips business is feasible. The panelist test results showed that the total score was 27 with an average score of 3.00 and was presented to 75% and was in the preferred category. Meanwhile, the results of the preference test of 30 respondents, namely traders in Pasar Panjang, obtained an average percentage of 84.81% and are included in the preferred category. One production of chicken intestine chips can produce 30 packs. In its packaging, which is sold at Rp. 10,000, revenue from sales reaches Rp. 300,000.00. After deducting the total costs incurred of IDR 132,779.00, the profit earned is IDR 167,221.00.
